The ingredients needed to make Mizutaki:
  1. Take 1-1 & 1/2 litres Chicken Stock *depending on the size of the pot you use
  2. Make ready 600 g Chicken Thigh Fillets *cut into bite-size pieces
  3. Prepare 300 g Tofu *medium soft type such as ‘Momen’
  4. Take Vegetables *cut into the size that is easy to eat
  5. Make ready e.g. Cabbage, Wombok, Bok Choy, Mizuna, Shungiku (Edible Chrysanthemum), Shiitake, Enoki, Shimeji, Carrot, etc
  6. Get Dipping Sauce

  8. Take 1 Spring Onion *finely chopped
  9. Get Shichimi (Japanese Chilli Spice Mix)
Instructions to make Mizutaki:
  1. Half fill a pot with Chicken Stock and heat over a medium high heat.
  2. Add Chicken, Tofu and Vegetables, and cook. When cooked, you may take whatever you like from the pot and enjoy it with Ponzu dipping sauce.
  3. *Note: You don’t need to cook all ingredients at once. As you eat, add more fresh ingredients as necessary and cook.
  4. *Note: After you finish eating this dish, you have a very nice soup left in the pot. This soup should not be wasted. By adding Cooked Rice or Udon Noodles, you can easily enjoy the the soup.

In general, people have been conditioned to think that “comfort” foods are bad for the body and need to be avoided. Cold water fish are great for eating if you want to fight depression. Tuna, trout, mackerel, herring and wild salmon are all full of omega-3 fats and DHA. These are two things that actually help the grey matter in your brain run a lot better. It’s true: consuming a tuna fish sandwich can seriously boost your mood.

Some grains are really wonderful for fighting off bad moods. Quinoa, millet, teff and barley are all actually wonderful for helping increase your happiness levels. These foods can help you feel full for longer too, which is a mood improver. Feeling hungry can actually make you feel terrible! The reason these grains are so great for your mood is that they are easy to digest. They are simpler to digest than other foods which helps kick up your blood sugar levels and that, in turn, raises your mood.

Green tea is truly great for your mood. You knew green tea had to be included in this article, right? Green tea has a lot of an amino acid referred to as L-theanine. Studies prove that this specific amino acid can essentially stimulate brain waves. This helps sharpen your mental energy while at the same time making the rest of your body more relaxed. You probably already knew it is not difficult to become healthy when you consume green tea. And now you are aware that green tea can help you be happier also!
