To begin with this recipe, we must prepare a few ingredients. You can cook ji agworagwo using 9 ingredients and 7 steps. Here is how you can achieve it.

The ingredients needed to make Ji Agworagwo:
  1. Take 1/2 tuber medium size yam
  2. Get 1/2 cup palm oil
  3. Prepare 4 bunch green leaf
  4. Make ready 5 large gizzards
  5. Prepare 1 smoked Titus fish
  6. Make ready to taste Salt
  7. Make ready 5 large fresh habanero pepper
  8. Get 1 large onion
  9. Make ready 2 knorr cubes

I prefer buying yams from hausas anytime. Nkechi, yes you can use ugu. I wouldn't use green amaranth because in Igboland, we do not use green amaranth to cook soups. 🙂. Ji Agworagwo is a simple dish where the yam is washed unpeeled, boiled in the skin till soft, peeled and the palm oil cray fish, salt and shredded Utazi or Ncahwun is added to the hot yam and stirred and eaten.

Steps to make Ji Agworagwo:
  1. Peel and Slice yam into small cube, wash and place inside a pot; wash gizzards dice into tiny bit and add to the yam, add little salt and water to cook the yam and gizzards place on heat.
  2. Wash onion and pepper and pound in a mortar or shred in a blender then set aside; clean smoked fish and debone shred in the process and set aside
  3. Peel and wash vegetables leaf thoroughly making sure there is no sand in it; I washed my vegetable with salt or white vinegar and I wash more than 5 times to avoid any form of sand; once you are done washing, slice and set aside
  4. While the yam is cooking, heat up another pot add the palm oil, and once the oil is hot, add onion and pepper stir for a minute or two then add salt and knorr cube; then stir in smoked fish allow it cook for another 3 minutes
  5. Add the vegetables leaf, stir to mix everything together and within that period yam is cooked, drain the water from the yam and pour the yam into the vegetables sauce pot and mix everything together
  6. Mash the yam in the process to get your porridge look and turn off heat almost immediately to avoid to avoid your vegetables getting over cooked
  7. Serve and enjoyed your meal
