Steps to make Gizdodo from Harvard 💪🏼:
- Wash, peel and cut plantains into cubes.
- Wash gizzard,cut into bite sizes and then steam with onion, garlic, ginger, dry pepper, salt and maggi (you can spice it anyhow you like really)
- Once the gizzard is done, drain the stock and set aside.
- Fry your plantains and set aside. Also dry-fry your gizzard slightly.
- In a dry pan or wok, Put a little oil and heat up.
- Note:I used an almost equal quantity of both gizzard and plantains you can have more of what you prefer.
- Fry the onions for a bit, add diced carrots. After a while add sliced scotch bonnets and tomatoes (maybe one bulb) and fry
- Add the spring onions and beans and stir fry for a little while
- Add a little of the sieved gizzard stock at this time and stir for a while.
- Taste for salt. Add both gizzard and plantains at this time and fry together. Then add the bell peppers (I added it last so it doesn’t get “soggy” or overcooked) stir fry all together. And let steam for about 5 minutes.
- Done! Serve with a chilled glass of Fanta 🙈
