Although many find the idea of eating fish heads confronting, the tender cheeks are quite irresistible and you'll adore the flavours of the curry leaves mingled with lemongrass. There are many different varieties of Indonesian curry. One of those varieties is called "Gulai or Gule". This dish is very popular in most part of Java and West Sumatra region.

Fish Curry /Gulai Ikan is one of the most popular of current trending meals in the world. It’s easy, it is quick, it tastes delicious. It’s enjoyed by millions daily. They are nice and they look wonderful. Fish Curry /Gulai Ikan is something that I’ve loved my whole life.

The ingredients needed to make Fish Curry /Gulai Ikan:
  1. Prepare 2 medium tomato
  2. Take 1 cup mix of spring onion and fresh coriander
  3. Get 2 slice dried tamarind
  4. Get 1 tbsp salt
  5. Make ready 1 tbsp light soy sauce
  6. Take 3 stick lightly crush lemongrass head
  7. Make ready 3 tbsp oil
  8. Make ready 1 large fish head or any fish fillet
  9. Prepare 5 chicken gizzards (optional add on)
  10. Make ready 150-200 ml water
  11. Get 100 ml coconut milk
  12. Make ready gulai paste
  13. Get 5 clove garlic
  14. Prepare 8 small shallot
  15. Make ready 2 inches turmeric
  16. Prepare 1 candle nut
  17. Take 4 deseeded red chili pepper
  18. Prepare additional add on

To make spice paste, process all ingredients in a food processor to a smooth paste, adding more water if necessary. Gulai Tumis is a hot and sour curry which is traditionally famous among the Nyonya and Hainanese households in Malaysia. I realise that the difference is that the Hainanese Gulai Tumis is more concentrated. Pour in oil in a pot and heat up.

Instructions to make Fish Curry /Gulai Ikan:
  1. Pound gulai paste then set aside.
  2. Deep fry fish till 3/4 cooked and lightly crispy drain and set aside
  3. In pan with oil saute gulai paste for 2 minute then add lightly smashed lemongrass saute for another 1 minute
  4. Add water and tamarind slice then bring it to a boil
  5. Add chicken gizzard (if using) and season with salt and simmer for 10 minutes (omitted this step if not using any chicken gizzard)
  6. Add deep fried fish head and tomato with spring onion and coriander
  7. Add coconut milk (more if you like it creamy) and bring it to a boil then off heat and serve

I realise that the difference is that the Hainanese Gulai Tumis is more concentrated. Pour in oil in a pot and heat up. When the oil rises up, add in the lady fingers and fish.
